- a kilo of yellow sweet potato, boiled & mashed
- 1 egg beaten
- 1/4 tsp fine salt
- 1/4 tsp white pepper powder
- 1 cup cooked bacon, chopped
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
Procedure:
- Boil pineapple juice and brown sugar for 5 minutes. Use to baste sweet potato balls.
- Meanwhile, combine first-four ingredients together. Shape into balls and roll in chopped bacon. Arrange in greased pan. bake at 350 degrees fahrenheit for 15-20 minutes or until nicely colored.
- Serve with toothpicks
